食のリサーチを行うイニシアチブ「Food Atlas」の2冊目の本で、トピックは大根。大根農家が減少していると言われている、愛知県の六連町に、2016年の終わりにリサーチに向かいました。なぜ日本の食卓にとって欠かせない野菜である大根が、作れられなくなっているのだろうか?その背景を探るため、大根農家1人、かつて大根農家であったが現在はキャベツを育てている農家4人、計5人の農家にインタビューを行いました。この本は、地図や年表、インタビューの全編記録を含む、リサーチの結果をまとめたものとなっています。

This is the second edition of the Food Atlas series, focusing on the Japanese white radish, also known as daikon. We embarked on a journey to Mutsure Town in Aichi Prefecture, Japan, after hearing rumors that the number of daikon farmers was decreasing. We were curious to understand how a popular vegetable like daikon could become unpopular among farmers. To uncover the truth, we interviewed 5 farmers, with only one of them still actively growing daikon, while the others had given up after decades of cultivation. This publication is a record of our research, featuring maps, timelines, and complete transcripts of our interviews with the farmers.
